Pan fried sardines with green pesto
Ingredients
3 fresh sardines per person (gutted)
olive oil
plain flour
sea salt and freshly cracked pepper
green pesto
fresh parmesan
salad leaves or rocket and watercress to garnish
PRE-HEAT the oven to 180c.
Lightly flour the sardines and pre-heat a large non stick pan.
Add the olive oil and pan fry each side for 2 minutes.
Coat with green pesto sauce and freshly grated parmesan cheese.
Bake for 6 minutes in the oven and serve with salad leaves or fresh rocket and watercress.
