Oreo muffins

Ingredients
6 oz plain flour

2 oz sugar

1 tbsp baking Powder

1/2 tsp salt

3 oz cold margarine or butter

1 egg

8 fl oz milk

16 Oreo cookies, coarsely chopped

PREHEAT the oven to 200c/400°F.

Mix flour, sugar, baking powder and salt in a medium bowl.

Cut in margarine with pastry blender or two knives until mixture resembles coarse crumbs.

Beat egg and milk with wire whisk until well blended and add to flour mixture.

Stir just until moistened and then gently stir in chopped cookies.

Spoon evenly into 12 greased or paper-lined medium muffin cups.

Bake for 15 to 20 minutes or until toothpick inserted in centres comes out clean.

Remove from pan and cool slightly on wire rack.

Serve warm.
