Hungarian goulash

Ingredients
2lb lean braising beef, cut into cubes

2 large onions

1 red chilli, deseeded and cut small

3 cloves of garlic, peeled and crushed

1 tbsp paprika

1/2 tsp chilli powder

1 tbsp tomato puree

1 400g chopped tomatoes

2 red pepers, deseeded and cut into chunks

Salt and pepper

HEAT a heavy pan and fry the beef in small batches, browning on all sides. Remove and keep warm.

Now fry the onions, garlic and chilli.

Add the beef and the paprika and chilli powder and mix together.

Add the tomato puree and tomatoes and simmer for 45 minutes to an hour or until tender.

10 minutes before serving add the peppers.

Serve with sour cream and rice or vegetables.
