JOHN SPENCE (Executive Chef)
Aged 36, married with two young children,
Lives in Hull.
Has worked at the Spa since 1999.

JOHN heads up a team of four chefs, six kitchen assistants and a pool of casual staff.

He is responsible for all catering at The Spa and the smooth running of its brand new sparkling state of the art kitchen.

"This facility is fantastic, it is like Christmas for me really," said John, who throughout the development period has been able, with sous chef Martin Kendal, to influence what his kitchen contains.

He is looking forward to the challenge of catering for all types of event – small private functions, conference buffets or sit down meals, wedding receptions or full banquets.

To some extent it will be a baptism of fire. His first full banquet, for 400 guests in the Royal Hall, is the Business Week dinner on June 3 with celebrity chef Gordon Ramsay, who is also the guest speaker

"We will be working together in the kitchen, it will be another first for me. I think my swearing is up to the occasion," said John about the celebrity chef renowned for his use of the F word as much as he is for his culinary skills.

John began work at the old Spa in 1999 as catering supervisor and was promoted to senior catering supervisor. He has been at Leisure World while the new Spa has been created and his new post is yet another promotion.
